Pleurotus eryngii Türünün Farklı İzolatlarına Ait Mantarların Bazı Mineral Besin İçeriklerinin Belirlenmesi
Bu çalışma tüm dünyada Pleurotus türlerinin kralı olarak bilinen (The King Oyster) Pleurotus eryngii mantarının farklı izolatlarında mineral madde içeriklerinin belirlenebilmesi amacıyla yapılmıştır. Çalışmada Pleurotus eryngii türüne ait farklı lokasyonlardan elde edilen 15 farklı izolat materyal olarak kullanılmıştır. Örneklerde fosfor, potasyum, kalsiyum, magnezyum, sodyum, demir, mangan ve çinko belirlemesi yapılmıştır. Her bir izolatın mineral içeriği sap ve şapkada ayrı ayrı belirlenerek elde edilen sonuçlar değerlendirilmeye alınmıştır. Elde edilen sonuçlara göre mineral içerikleri sap ve şapkada önemli oranda farklılık göstermiştir. Fosfor, magnezyum, demir, mangan ve çinko şapkada daha yüksek oranda bulunurken potasyum, kalsiyum ve sodyum mantar sapında yüksek olarak belirlenmiştir. Ortalama değerler dikkate alındığında izolatlar arasında mineral içerikleri açısından önemli farkların olduğu görülmüştür. K7 ve J113 en yüksek fosfor içeren izolatlar olmuşlardır. WC888 hem potasyumu hem de sodyumu en çok içerirken, WC999 mangan ve magnezyum içeriği en yüksek olan izolatlar olmuştur. Kalsiyumu en fazla J113 izolatı içerirken, demir açısından en zengin izolat ise K78 olarak saptanmıştır. Çinko açısından en yüksek içerik K78, J113, M18 ve WC 955 izolatlarında belirlenmiştir.
Determining Certain Mineral Nutrition Contents of Mushrooms from Different Isolates of the Species Pleurotus eryngii
This study was conducted to be able to determine the contents of mineral matter in different isolates of Pleurotus eryngii mushrooms, which is known as the King of Pleurotus species (The King Oyster). In the study, 15 isolates belonging to the species of Pleurotus eryngii collected from different locations were used as materials. Phosphorus, potassium, calcium, magnesium, sodium, iron, manganese and zinc levels in the samples were identified. The mineral contents of each isolate were determined separately in the stem and cap and the results obtained were thus included in evaluation. According to the results obtained, the mineral contents showed significant differences in the stem and cap; phosphorus, magnesium, iron, manganese and zinc were found at higher ratios in the cap whereas potassium, calcium and sodium were determined at higher ratios in the mushroom stem. When the average values were taken into account, it was seen that there were significant differences among isolates in terms of their mineral contents. K7 and J113 were the isolates containing the highest amount of phosphorus. WC888 isolate contained the highest amount of both potassium and sodium whereas WC999 was the isolate with the one with the highest manganese and magnesium content. The calcium was the highest in the J113 isolate whereas the isolate K78 was identified as the one which was the richest in terms of iron. The highest content in terms of zinc was identified in the isolates K78, J113, M18 and WC 955.
