RESTORAN İŞLETMELERİNDE ÖRGÜTSEL ÖĞRENME, İNOVASYON VE KURUMSAL ÇEVRECİLİK ARASINDAKİ İLİŞKİLERİN İNCELENMESİNE YÖNELİK BİR ARAŞTIRMA

Sürdürülebilir turizm kapsamında turizm sektöründeki işletmelerin çevreyle dost uygulamaları günümüzde önem kazanmaktadır. Çalışmaların büyük çoğunluğu sektördeki otel işletmelerine yapıldığı fakat sektörde özelikle kobi sayısı bakımından oldukça fazla sayıda olduğu düşünülen restoranların arka planda kaldığı görülmektedir. Bu sebepten dolayı bu çalışmada restoran işletmelerinin kurumsal çevrecilik düzeylerinin araştırılması amaçlanmıştır. Çalışmada ayrıca örgütsel öğrenme ve inovasyon performansı arasındaki ilişkiler ve bu değişkenlerin kurumsal çevrecilik üzerinde etkisi araştırılmıştır. Çalışma İstanbul ilindeki restoran yöneticilerine anket yöntemiyle yapılmış olup toplamda geçerli 483 anket üzerinden analizler yapılmıştır. Çalışma sonuçlarına göre restoran işletmelerinin örgütsel öğrenme düzeyinin inovasyon yetenekleri üzerinde anlamlı etkisi bulunmuştur. Ayrıca işletmelerin örgütsel öğrenme düzeyinin işletmelerin kurumsal çevrecilikleri üzerinde anlamlı etkisi olduğu görülmüştür. Buna karşın işletmelerin inovasyon düzeyinin kurumsal çevrecilik üzerinde anlamlı bir etkisi tespit edilememiştir. Buna göre örgütsel öğrenmenin işletmelerin inovasyon yeteneğini ve kurumsal çevreciliklerini belirleyen önemli bir faktör olduğu anlaşılmıştır

A STUDY ON RELATIONSHIP OF ORGANIZATIONAL LEARNING INNOVATION AND CORPORATE ENVIRONMENTALISM IN RESTAURANT BUSINESSES

Within the scope of sustainable tourism environmental friendly applications of tourism businesses are becoming important today. It has seen that majority of academic studies about this issue are focusing on hotels so the restaurants are remains background..For this reason it is aimed to investigate the level of corporate environmentalism the restaurant business in this study. The study also contains relationship between organizational learning and innovation performance and their impact on corporate environmentalism. Study was applied to restautant managers in Istanbul with the survey method and the analysis were made over 483 valid observations. According to results of the study the organizational learning has significant impact on the innovation capabilities in restaurant business. It has also seen that the organizational learning has significant effect on corporate environmentalism of the businesses. However, it has not been detected a significant impact on corporateenvironmentalism of the innovation level of enterprises. Consequently, it was understood that corpotate environmentalism is an important factor that determines the ability of the company's organizational learning and innovation
