Hayvanlar farklı amaçlara yönelik olarak kara, demir, deniz ve hava yoluyla çeşitli sürelerde bir yerden bir yere nakledilmektedirler. Bu nakil amaçlarından biri de, kasaplık hayvanların kesimhanelere götürülmesidir. Nakil işlemi hangi yolla yapılırsa yapılsın hayvanlar için potansiyel bir tehlikedir. Nakil işlemleri sırasında hayvanların yaşadığı stres; nabız atım sayısında, adrenal aktivitede ve enfeksiyonlara bağlı olarak gelişen mortalite ve morbiditede artışa neden olmaktadır. Kasaplık hayvanlar nakil esnasında, kesim öncesinde ve sırasında hayvan-hayvan ya da insan-hayvan temasından kaynaklanan fiziksel ve psikolojik stres faktörlerine maruz kalmaktadır. Bu durum hem hayvanların refahının azalmasına hem de karkasın koyu, etin sert ve kuru olmasına neden olmaktadır. Bu derlemede hayvanların çiftlikten mezbahaya nakli ve kesimi esnasında sağlanan koşulların hayvan refahı ve et kalitesi üzerindeki etkilerinden bahsedilecektir

Nakil ve Kesim Koşullarının Et ve Karkas Kalitesi Üzerine Etkileri

Animals are transported from one place to another by using highway, railway, seaway and airway for different purposes at various times. One of the purposes for such transportation is to bring animals to slaughter plants. Regardless of the way in which transport, it is a potential danger for the animals. During transportation process, the stress experienced by the animals causes increased number of pulses, adrenal activities and mortality and morbidity which are developed depending on infections. During the transportation to slaughter animals are exposed to physical and psychological stress factors arising from animal-animal or human-animal contacts before or during slaughter. This situation reduces both the welfare of animals as well as leading carcass to be dark, and the meat hard and dry. In this study, it will be discussed effects of conditions provided during transportation of animals from farms to abattoir and at the moment of slaughter on animal welfare and meat quality
