Bu çalışmada Antep karası çeşidine ait üzümlerin kabuk soymaya ve konserveciliğe uygunluğu araştırılmıştır. Elde edilen bulgular çeşidin kabuk soymaya ve konserveye işlemeye uygun olduğunu, CaCl2 kullanımının ise ürünün dokusal ve diğer duyusal özelliklerini iyileştirdiğini göstermiştir. 

Suitability of Antep karası grape variety for peeling and canning was determined. Results showed that the variety contained proper characteristics for the purpose. Addition of CaCl2 to syrup had improving effect on texture and other sensory properties of the canned product.
