FARKLI BÖLGELERDEN ALINAN ALPHONSE LAVALLÈE ÜZÜM ÇEŞİDİNİN KABUK VE ÇEKİRDEKLERDE BULUNAN FENOLİK BİLEŞİK MİKTARLARININ BELİRLENMESİ
Üzüm tanesinin kabuğunda ve çekirdeğinde yüksek oranda bulunan fenolik bileşikler, antioksidanlar veantosiyaninler insanların üzüme ve üzüm ekstraktlarına yönelmesine neden olmuştur. Vitis vinifera L.’yaait Alphonse Lavallée üzüm çeşidi morumsu–siyah kabuk rengine sahip olmasından dolayı fenolikbileşikler, antioksidanlar ve antosiyaninler açısından oldukça zengindir. Ayrıca sofralık olmasına karşınçekirdekli olarak tüketilen bir çeşit olması da çekirdeklerinde bulunan fenolik bileşiklerden veantioksidanlardan yararlanma imkânı sunmaktadır. Bilindiği gibi aynı çeşide ait asmalar farklı bölgelerdeyetiştirildiğinde farklı ekolojik koşullara maruz kaldığından morfolojik ve fizyolojik olarak çeşit içifarklılıklar meydana gelmektedir. Bu çalışmada; önemli bir sofralık üzüm çeşidi olan Alphonse Lavalléeçeşidinin 3 farklı (Efemçukuru–İzmir, Kalecik–Ankara, Merkez–Tekirdağ) bölgeden alınan örneklerindetoplam fenolik bileşik, antioksidan aktivite ve toplam antosiyanin analizleri yapılmıştır. Kabukta enyüksek toplam fenolik bileşik, antioksidan aktivite ve toplam antosiyanin değerlerini sırasıyla 47275mg/kg KA, 484.1 μmol/g trolox KA ve 23583 mg/kg KA sonuçları ile Merkez–Tekirdağ ilinden alınanörnekler vermiştir. Çekirdekte ise; toplam fenolik bileşik ve antioksidan aktivite değerlerinin eldeedilmesi için yapılan analizler sonucunda 83250 mg/kg KA ve 723.7 μmol/g trolox KA değerleri ileEfemçukuru–İzmir ilinden alınan örneklerden en yüksek değerler elde edilmiştir.
DETERMINATION OF THE PHENOLIC COMPOUND QUANTITY OF THE ALPHONSE LAVALLÈE GRAPE VARIETY FROM DIFFERENT REGIONS IN SKIN AND SEEDS
High levels of phenolic compounds, antioxidants and anthocyanins in the skin and seed of grape cause people to turn to grape and grape extracts. The Alphonse Lavallée grape variety of Vitis vinifera L. is quite rich in terms of phenolic compounds, antioxidants and anthocyanins because of its purple–black skin color. In addition, although it is a table, it is a kind that is consumed as a seed, it also provides the opportunity to benefit from phenolic compounds and antioxidants found in the seeds. As it is known, since the stands belonging to the same kind are exposed to different ecological conditions when grown in different regions, morphological and physiologic differences within the species occur. In this study; total phenolic compounds, antioxidant activity and total anthocyanins were analyzed in three different samples of Alphonse Lavallée cultivar (Efemçukuru–İzmir, Kalecik–Ankara, Merkez–Tekirdağ) which is an important table grape variety. The highest total phenolic compound, antioxidant activity and total anthocyanin levels in the skin were obtained from the provinces of Merkez–Tekirdağ with 47275 mg/kg DW, 484.1 μmol/g trolox DW and 23583 mg/kg DW, respectively. In the seed; the highest values were obtained from the samples taken from Efemçukuru–İzmir with the values of 83250 mg/kg DW and 723.7 μmol/g trolox DW as a result of the analyzes performed to obtain the total phenolic compound and antioxidant activity values.
