Farklı Oranlardaki Sentetik β-Karotenin Alabalık (Oncorhynchus mykiss, W. 1792) Filetolarında Kas Karotenoid Stabilitesi ve Lipid Peroksidasyon Düzeyine Etkileri

Bu çalışmada, rasyonlarına farklı oranlarda (kontrol, 30 mg/kg, 70 mg/kg) β-karoten katılarak renklendirilen gökkuşağı alabalığı filetoları -18°C’de 6 ay süreyle muhafaza edilmiş ve aylık olarak β- karoten ve lipid peroksidasyon miktarında meydana gelen değişimler incelenmiştir. β-karoten miktarı spektrofotometre, lipid peroksidasyon düzeyi ise HPLC ile tespit edilmiştir. Besleme sonucu en fazla renklenme 70 mg /kg β-karoten içeren grupta görülmüştür. Ancak yine bu grupta muhafaza süresince önemli düzeyde (p0,05) tespit edilmiştir.

Effect of Synthetic β-Carotene at Different Rates on the Levels of Lipid Peroxıdatıon and Muscle Carotenoıd Stabılıty of the Raınbow trout (Oncorhynchus mykıss, W. 1792) Fıllets

In this study, the diets of different ratios (0 mg/kg, 30 mg/kg, 70 mg/kg β-carotene) of rainbow trout fillets coloured with β-carotene were storage of -18 °C for 6 monts period and monthly changes in the amount of β-carotene and lipid peroxidation were investigated. The amount of β-carotene was determined with spectrofotometer while the level of lipid peroxidation was determined by HPLC. The maximum coloration at the end of feeding was observed in 70 mg/kg β-carotene group. However, significant (p0.05).
