TOPRAKTAN ŞARABA, BORNOVA MİSKETİNİN ÖZELLİKLERİNİN BELİRLENMESİ
Bu çalışmada Menderes yöresi Sarıçay bağının yöre özellikleri, bu bağda yetiştirilen Bornova Misketiüzümünün (fenolojik, olgunlaşma, bileşim özelliklerinin) ve şarabının kalite özellikleri genel olarakincelenmiştir (2012–2013). Aroma ve fenol bileşiklerinin tanımlanması ve miktar tayininde sırasıyla,GC/MS ve LC/MS–MS, olfaktometrik analizlerde GC–O kullanılmıştır. Duyusal analizlerde lezzet profilanalizi yöntemi uygulanmıştır. İklim özellikleri bakımından Menderes yöresinin ılıman bir iklime sahipolduğu, toprak yapısının kumlu–killi–tınlı yapıda ve makro–mikro elementlerce zengin olduğu tespitedilmiştir. Çalışma sonuçlarına göre Bornova misketi üzümü orta olum, küçük taneli, orta salkımboyutlarında, düşük asitlik, yüksek indirgen şeker miktarına sahip bir üzüm çeşididir. Bornova Misketiüzümünden üretilen sek şarapların toplam asit miktarı 6.0 g/L civarında ve pH değeri yaklaşık olarak 3.5,alkol miktarı yaklaşık olarak %13.8 bulunmuştur. Üzüm ve şaraplarda terpenlerin temel bileşikler olduğuve linalol’ün en önemli bileşik olduğu saptanmıştır. Üzümlerde 30, şaraplarda 52 adet aroma bileşiğitanımlanmış ve 15 adet koku aktif bileşik belirlenmiştir. Bağlı aroma miktarı üzümlerde 15, şaraplarda 20adet olarak tespit edilmiştir. En baskın bağlı aroma bileşikleri nerol ve jeraniol olmuştur. Üzümlerde 15,şaraplarda 14 adet fenolik bileşik belirlenmiş; bunlardan kateşin üzümlerde, trans–kaftarik ise şaraplardabaskın fenolik bileşik olmuştur. Duyusal analiz sonuçlarına göre Bornova Misketi şarabı çiçeksi vemeyvemsi, özellikle de tropik olarak tespit edilmiştir. Görsel değerlendirmede şaraplar soluk sarı veyeşilimsi olarak nitelenmişlerdir.
FROM ITS SOIL TO WINE, DETERMINATION OF MUSCAT OF BORNOVA PROPERTIES
In this study, the terroir characteristics of Menderes, Sarıçay vineyard and the quality of Muscat of Bornova grape and its wine have been examined briefly (2012–2013). GC–MS and LC/MS–MS were used for identification and quantitation of aroma and phenolic compounds, respectively. GC–O was used for olfactometric analysis. The flavor profile analysis method was applied in sensory analysis. In terms of climate characteristics Menderes region has a mild climate, in the terms of soil structure it is in sandy–clay– loamy structure and rich in macro–micro elements. According to the results, muscat of Bornova grape is a medium–quick maturing and small berried type. It has low acidity and high reducing sugar content. The total acid content of the wines produced from Bornova Misketi grape is around 6.0 g/L and the pH value is about 3.5 and the alcohol content is about 13.8%. In grapes and wines, terpenes are the main compounds and linalol is the most important compound. 30 free aroma compounds were identified in grapes, 52 free aroma compounds in wines and 15 odor active compounds were identified. The amount of bound aroma was determined as 15 in grapes and 20 in wines. The dominant aroma compounds are nerol and geraniol as bound. As phenolic compounds, 15 in grapes, 14 in wines were identified; Catechin is the predominant phenolic compound in grapes, while trans–caffeine is the predominant phenolic compound in wines. According to the results of sensory analysis, the muscat of Bornova wine was found to be floral and fruity, especially tropic. Wines are characterized as pale yellow and greenish in visual evaluation.
