Farklı nişasta ve emülgatör çaeşitlerinin ve yağ miktarlarının mikrodalga ile pişirilen keklerin bayatlaması üzerindeki etkileri
Farklı nişasta ve emülgatör çeşitlerinin ve yağ miktarlarının mikrodalgada pişirilen keklerin bayatlamasının engellenmesi üzerindeki etkileri araştırılmıştır. Çalışma iki kısma bölünmüştür. İlk kısımda, beş değişik nişasta tipinin (mısır, patates, mumsu mısır, amilomısır ve prejelatinize nişasta) mikrodalga fırında pişirilen keklerin bayatlamasının engellenmesi üzerindeki etkileri belirlenmiştir. Kontrol olarak, hiç nişasta veya emülgatör katılmamış kekler mikrodalga fırında 1,5 dakika pişirilmiştir. Ayrıca, aynı formülasyona sahip kekler karşılaştırma amacıyla konvansiyonel fırında da 175°C'de 25 dakika pişirilmiştir. Bu çalışmanın sonucunda, en etkili nişasta tipi olarak prejelatinize nişasta seçilmiştir. İkinci kısımda, farklı emülgatör çeşitleri (DATEM, Lecigran, ve Purawave) ve farklı yağ miktarlarının (%50, %25, ve %0) mikrodalga fırında pişirilen keklerin bayatlaması üzerindeki etkileri çalışılmıştır. Bayatlamanın göstergeleri olarak keklerin ağırlık kaybı, sertlikleri, ve çözülebilir nişasta miktarı kullanılmıştır. DATEM ve Purawave'in en etkili emülgatör çeşitleri olduğu görülmüştür. %25 yağ ile Purawave veya DATEM içeren formülasyonlar bayatlamayı engelleyen ve en yüksek kaliteyi veren formülasyonlar olarak seçilmiştir.
Effects of different starch and emulsifier types and fat contents on staling of microwave-baked cakes
The effects of different types of starches and emulsifiers and fat contents on the retardation of staling of microwave baked cakes were investigated. The study is divided into two parts. First, the effects of five different starch types (corn, potato, waxy corn, amylomaize, and pregelatinized starches) on the retardation of staling of microwave baked cakes were determined. As a control, cakes formulated without any starch or emulsifier addition were baked in microwave oven for 1.5 min. Also, cakes with the same formulation were baked in conventional oven at 175°C for 25 min. For the first part of the study, pregelatinized starch was chosen as the most effective starch type. In the second part, the effects of different types of emulsifiers (DATEM, Lecigran and Purawave) and different fat contents (50%, 25% and 0%) on the staling of microwave baked cakes were studied. Weight loss, firmness, and soluble starch content of the cakes were used as the indicators of staling criteria. DATEM and Purawave were the most effective emulsifier types. Formulations with 25% fat content plus Purawave or DATEM were chosen as the most effective formulations to prevent staling and give highest quality.
