Beyaz kum midyesini (Chamelea gallina L., 1758) et verimi ve besin madde içeriği üzerine bir araştırma

Bu araştırmada, beyaz kum midyesinin (Chamelaa galllna) et verimi ile etinin kuru madde, su, ham protein, ham yağ ve ham kül gibi besin maddelerinin belirlenmesi amaçlanmıştır. Beyaz kum midyesinin canlı ağırlık ortalaması 3.464±0.075 g, kabuk ağırlığı 2.307 ± 0.052 g ve yenilebilir et ağırlığı 1.157±0.029 g olarak belirlenmiş, % 66.60'ını kabuk, % 33.40'ını yenilebilir etin oluşturduğu saptanmıştır.Kimyasal analiz sonuçlarına göre;beyaz kum midyesinin etinde ortalama su oranı % 85.76, kuru madde % 14.24, ham protein % 8.49, ham yağ % 0.54, ham kül % 2.27, kalsiyum % 0.27 ve tostor % 0.13 olarak tespit edilmiştir.

A research on the meat efficiency and nutrient content of striped venus (Chamelea gallina L., 1758)

The aim of this research was to determine the méat efficiency and the nutrient materials of Its meat such as moisture, crude protein, crude fat and crude ash of striped venus. The mean live weight, shell weight and edible meat weight of stripped venus was determined as 3.464±0.075 g, 2.307 ±,0.052 g and 1.15710.029 g respectively so that the percentages of shell and meat of striped venus were found to be 66.60 % and 33.40 % respectively. As a result of the chemical analysis it was found that the percentages of the mean moisture, dry matter, crude protein, crude fat, crude ash, calcium and phosphor of the striped venus were 85.76 %, 14.24 %, 8.49 %, 0.54 %, 2.27 %, 0.27 % and 0.13 % respectively.
