TRANS YAĞ ASİTLER! KAYNAKLARI VE İNSAN SAĞLIĞI ÜZERİNE ETKİLERİ

İnsan diyetinde hem bitkisel hem de hayvansal kökenli yağlar önemli yer tutmaktadır. Bu yağların büyük oranını farklı yağ asitlerinin gliserol esterleri olan trigliseritler oluşturmaktadır.Yağ asitleri temelde doymuş ve doymamış yağ asitleri olarak sınıflandırılmaktadır. Doymamış yağ asitlerinde geometrik izomeri bunun yanında pozisyonel izomeri görülmektedir. Trans izomeriye doğada çok nadir rastlanmaktadır fakat hidrojenasyon ve rafinasyon gibi yağlara uygulanan bazı işlemler bu tip izomer oluşumuna neden olabilmektedir. Yapay olarak ısıl işlem, hidrojenasyon gibi çeşitli etkenlerle meydana gelmektedir. Trans yağ asitleri çeşitli sağlık sorunlarına neden olabilmektedir. Bu derlemede, trans yağ asitleri içeren gıdalardan ve trans yağ asiîfennin irioan sağlığı üzerine etkilerinden bahsedilmektedir. Burada bazı sağlık problemlerine neden olan yüksek trans yağ asidi içeren bazı gıdalar belirtilmektedir. Bu derlemede, gıdaların trans yağ asidi içerikleri ve bunların sağlık üzerine etkileri tartışılmaktadır.Anahtar Kelimeler: Trans yağ asitleri, koroner kalp rahatsızlığı, hidrojenasyon
