Sığır etlerinde streptomisin ve sulfametazin (Sulfadimidin) kalıntıları

Bu çalışmada, Bursa’daki büyük marketler ve kasaplarda tüketime sunulan ve Bursa civarındaki askeri birliklerden sağlanan sığır etlerinde streptomisin ve sulfametazin (sulfadimidin) kalıntılarının araştırılması amaçlanmıştır. Örnekler, 2005 yılında Kasım ile 2006 yılı Eylül ayları arasında toplandı ve streptomisin (n=63) ile sulfametazin (n=60) analizleri ELISA tekniği ile yapıldı. Streptomisin dört örnekte (%6) ve sulfametazin bir örnekte (%1.5) tespit edildi. Türkiye’de kesime gidecek sığırlarda antibakteriyel ilaçların kullanılabildiği, ancak saptanan streptomisin ve sulfametazin kalıntı düzeylerinin tüketici sağlığı açısından bir risk oluşturamayacağı kanısına varıldı.

Streptomycin and sulfamethazin (Sulphadimidine) residues in cattle meat

The aim of the study was to determine streptomycin and sulfamethazin (sulphadimidine) residues in cattle meat sampled from medium size to large size stores, butchers and military units in Bursa region. The sam- ples were collected from November 2005 to September 2006. Streptomycin (n=63) and sulfamethazin (n=60) residues were analysed by competitive enzyme-linked immunoabsorbent assay (ELISA) technique. Streptomycin and sulfamethazin were detected in four (6%) and in one (1.5%) meat samples, respectively. It is concluded from the results that some antibacterials were used in cattles, and the level of the antibacterials were not at concentrations to impose any risk for human health.
