Toplam tüketim harcamaları ve gıda ürünleri tüketim harcamaları tahmini, tanm ekonomisi ve uygulamalı ekonomi çalışmalarında önemli araştırma alanlarındandır. Bu çalışmanın amacı Türkiye İstatistik Kurumu (TÜİK) tarafından yapılan 2003-2008 kesit verilerini kullanılarak Türkiye'de hanehalkları tarafından yapılan genel tüketim ve gıda harcamaları ile gıda alt kategorilerinin gelir esnekliklerini tahmin etmektir. Araştırma sonuçlanna göre, Türkiye genelinde "konut ve kira" harcamaları toplam tüketim harcamaları içerisinde %29.1 ile en yüksek orana sahipken, "gıda" tüketim harcamaları %22.6 ile ikinci sıradadır. 2003 ve 2008 dönemleri Hanehalkı Tüketim Verilerini karşılaştırdığımızda, "gıda" harcamalarının %27.5'den %22.6'ya düştüğü, buna karşılık "konut ve kira" harcamalarının %28.3'den %29.1'e, "ulaştırma" harcamalarının ise %9.8'den %14.1'e yükseldiğini saptanmıştır. "Gıda" harcamaları kategorileri açısından bakıldığında ise, "ekmek ve tahıl" harcamaları %22.3 ilk sırada yer almakta, onu sırasıyla %17.2 ile "et ve et ürünleri" ve %15.7 ile "sebzeler" takip etmektedir. Çalışmada, ayrıca 11 gıda ana kategorisine ait gelir esnekliklerini tahmin etmek amacıyla Working-Leser modeli kullanılmıştır. Tahmin sonuçlanna göre, gelir esnekliği en yüksek olan ürün kategorisi "et ve et ürünleri" iken, en düşük olan "ekmek"'dir.

Estimating total commodity expenditures and main food consumption expenditures have been important research issues in agricultural and applied economics. The objective of this study is to estimate consumption expenditures for main food commodity categories and income elasticities for main food commodity categories in Turkey by using 2003-2008 cross sectional survey data from Turkish Statistical Institute (TurkStat). According to the results, while "housing and rent" has the highest share in total consumption expenditures with a share of 29.1%, the share of "food" expenditures is 22.6% in overall Turkey. When comparing the results of 2003 and 2008 Household Consumption Surveys, it is observed that the share of the "food" expenditures decreases to 22.6% from %27.5. On the other hand, the share of the "housing and rent" expenditures increases from %28.3 to 29.1%; "transportation" expenditures to 14.1% from 9.8%. In types of household main food commodity consumption expenditures, "bread and cereals" held the first place with the share of 22.32%, "meat and meat" products held the second place with the share of 17.2% and "vegetables" held the third place with the share of 15.7%. Heckman two-stage estimation procedure is used to estimate income elasticities for 11 main food categories. According to the results, "meat and meat" product category has the highest and "bread" category has the lowest income elasticities among food commodities.
