Siyez Buğdayının Sağlık Üzerine Etkileri

Tarihi geçmişi 12 bin yıl öncesine dayanan buğday,insanların temel besin kaynaklarından biridir. Besin vebeslenme ile ilişkili sağlık sorunlarının görülmesıklığındaki belirgin artış nedeni ile, ilkel buğdaytürlerinin besin ögesi içeriği ve sağlık üzerine etkilerimerak konusu olmuştur. Siyez buğdayı yüksekprotein, doymamış yağ asitleri, fruktan veantioksidan içeriği ile besin değeri yüksek ilkelbuğdaylardan biridir. Siyez buğdayının kan glukozdüzeyi, iştah, kardiyovasküler hastalıklar ve çölyakhastalığı üzerine etkileri çeşitli çalışmalardagösterilmiştir. Bu derleme makalesinde, siyezbuğdayının sağlık üzerine etkilerine yönelik yapılançalışmaların sonuçlarının tartışılması amaçlanmıştır.
