Bu araştırmada, Kombucha çayından 15 adet maya izole edilmiştir. İdentifikasyon sonuçlan bunların Saccharomyces cerevisiae (8), Candida krusei (2), Kloeckera apiculata (2) ve Kluyveromyces africanus (1) olduğunu göstermiştir. Mayaların genel inhibisyon etkileri bazı kontaminant ve patojen bakteriler (Escherichia coli, Staphylococcus aureus, Pseudomonas aeroginosa ve Yersinia enterocolitica) üzerinde ağar diffüzyon yöntemi ile belirlenmiştir. Araştırma sonuçları, mayaların S. aureus üzerinde değişik oranlarda inhibisyon etkilerinin olduğunu göstermiştir. Mayaların diğer test bakteriler üzerinde antimikrobiyal etki göstermedikleri tespit edilmiştir.  

In this research, total of 15 yeasts were isolated from Kombucha tea. Identification results showed that 8 species of Saccharomyces cerevisiae, 2 species of Candida krusei, 2 species of Kloeckera apiculata and 1 species of Kluyveromyces africanus.Inhibition activity of the yeasts against some contaminants and pathogen bacteria (E. coli, S. aureus, P. aeroginosa and Y. enterocolitica) were determined by agar diffusion method. Results showed that some of the strains were produced antimicrobial activity of S. aureus. It was observed that the other yeast strains were not inhibited the others test bacteria.
