Erken Hasatın Zeytinyağı Kalitesi Üzerine Etkileri

Yağlık zeytinin olgunluk derecesi, zeytinyağı kalitesine etki eden hasat öncesi faktörlerin başında gelmektedir. Daha kaliteli, daha aromatik ve besleme değeri yüksek zeytinyağı elde edilmesi bakımından zeytinlerin erken hasat edilmesi yaygınlaştırılmalıdır. Bu konuya dikkat çekmek ve üreticilerin bilinçlendirilmesini sağlamak amacıyla, erken hasatın zeytinyağı kalitesi üzerine etkileri incelenmiştir.

Affects of Early Harvesting On Quality of Olive Oil (Turkish with English Abstract)

The maturity degree of olives is one of the most important factor affect the quality of olive oil. To get more quality, more aromatic and higher nutritious olive oil, early harvesting of olives should be increased. To provide more conscious producer and call attention to this topic, the affects of early harvesting on quality of olive oils were investigated.
