Depolama sıcaklığı ve modifiye atmosferde ambalajlamanın gökkuşağı alabalığı filetolarının toplam bakteriyel yük ve renk değerleri üzerine etkileri
Araştırmada depolama sıcaklığı (4 ve 10 °C) ve değişik atmosfer şartlarının (hava, vakum, %100 $CO_2$ , %2,5 $O_2$ -%7.5 $N_2$ -%90 $CO_2$, %30 $O_2$ -%30 $N_2$ -%40 $CO_2$ ) gökkuşağı alabalığı filetolarının toplam bakteri sayısı ve renk değerleri üzerine etkileri incelenmiştir. The effects of storage temperature and packaging with modified atmosphere on total bacterial flora and color values (L*,A*,B*) of raibow trout (Oncorhynchus mykıss) fillets
In this research, the effects of storage temperature (4 and 10 °C) and different atmospher conditions (air, vacuum, 100% $CO_2$ , 2.5 % $O_2$ - 7.5 %$N_2$- 90% $CO_2$, 30% $O_2$ -30% $N_2$ -40% $CO_2$ ) on total bacterial flora and color values were investigated. Storage time, atmospher and storage time atmospher interaction were important (p0.05).
