Bu çalışmada bazı ekmeklik buğdayların ve bunların laboratuvar değirmeninde öğütülmesiyle elde edilen unlar ile kepeklerinin mineral madde miktarları tesbit edilmiştir. Buğdayların öğütülmesi ile una geçen mineral madde miktarları azalmıştır. Bu mineral maddelerin una geçme oranı çok düşük oranlarda olmuştur. Genellikle değirmen ürünleri undan daha fazla mineral madde içermektedirler. Mineral madde miktarlarının toplam kül ve toprak ile ilişkide olduğu görülmüştür.   

In this research wheat their flours and brans samples were analyzed for moisture, protein, ash and seven minerals (Fe, Cu, Zn, Na, K, Ca and P) contents.All of these minerals decreased when wheats milled to flour. Amounts of these minerals distributed to the flours were very low. Mill feeds contained higher levels of minerals except flour milled from the various wheat used.Amounts of the elements appears to be related to total ash and soil.
