Hipermarketlerde Gıda Temas Yüzeylerinin Mikrobiyolojik Özellikleri ve Satış Personelinin El Hijyeni Düzeyi*
Gıda temas yüzeyleri ve gıda işletmelerinde çalışan
personel, gıdaların en önemli kontaminasyon kaynaklarından birisidir. Yüzeylerin
ve personel ellerinin kirlilik düzeyi arttıkça kontaminasyon riski de artar. Bu
çalışma perakende sektöründe yer alan hipermarketlerde gıda temas yüzeylerinin
ve gıda reyonlarında çalışan personelin el hijyeni düzeylerinin belirlenmesi
amacıyla yapılmıştır. Çalışmada Türkiye’nin değişik şehirlerindeki
hipermarketlerin üretim, hazırlama, satış alanlarının (unlu mamuller, et, süt, su
ürünleri, meyve-sebze, tüketime hazır gıda bölümleri) gıda temas yüzeylerinden
toplam 279 örnek ve bu reyonlarda çalışan personelin ellerinden toplam 251
örnek alındı. El örneklerinde Escherichia
coli ve Staphylococcus aureus, gıda
temas yüzeylerinden alınan örneklerde ise toplam aerobik mezofilik bakteri (TAMB)
ve koliform bakterilerin sayıları araştırıldı. Örneklerin alınmasında svap
çubuklarından, alan belirlenmesinde ise 10cm2’lik örnek kalıplardan
yararlanıldı. 251 adet el örneğinin 14’ünde (%5.5) E. coli, 2’sinde (%0.8) S. aureus
izole edildi. E. coli sayısı 1-130 kob/10cm2 aralığında bulunurken S. aureus pozitif iki örnekte etken
sayısı 2 ve 5kob/10cm2 olarak belirlendi. Gıda temas yüzeylerinden
alınan örneklerin 132’sinde (%47) 1-6400 kob/10cm2 aralığında TAMB
tespit edilirken, 40 örnekte (%14.3) 1-6500 kob/10cm2 arasında
koliform grubu bakteri tespit edildi. Sonuçlar hipermarketlerin gıda hazırlama
ve satış bölümlerinde gıda hijyeni, iyi üretim uygulamaları ve HACCP sisteminin
takip edilmesi gerekliliğini ortaya koymaktadır.
The Level of Hand Hygiene of Sales Staff and Microbiological Properties of Food Contact Surfaces in the Hypermarkets
Food
contact surfaces and personnel are the most important source of food
contamination. Contamination risk of food contact surfaces and personnel
increase in parallel with the level of pollution. The objective of this study
was to determine the hygiene level of food contact surfaces and personnel hand
hygiene level in food production area of hypermarkets. In this study, a total
of 279 surface samples and 251 hand samples were taken from the food preparing,
salary, production area (bakery, dairy, meat, aquatic food, fruit-vegetable
products, ready-to-eat meal) of hypermarkets
in different cities of Turkey. Hand samples were evaluated for Escherichia coli and Staphylococcus aureus. The surface
samples were analyzed for total aerobic mesophilic bacteria (TAMB) and coliform
bacteria. Surface swab technique was used for sampling and sterile templates were
used to sample each 10cm2 surface area. E. coli was detected in 14 (5.5%) hand samples. Positive results
for E. coli were between 1 to 130cfu/10cm2.
Two samples (0.8%) were positive for S. aureus.
Positive samples were determined as 2 and 5 cfu/10cm2 ranges. In
food contact surfaces, TAMB were detected in 132 (47%) samples between 1-6400
cfu/10cm2. Total coliform bacteria were positive for 40 samples (14.3%)
between 1-6500 cfu/10cm2. Microbial evaluation of food contact
surfaces and staff is one of the most important subjects for food hygiene, GMP
and HACCP systems in food preparing and sales department of hypermarkets.
