Tatlısu kefali (Leuciscus cephalus linnaeus, 1758)' inden surimi üretimi üzerine bir araştırma
Bu araştırma, tatlısu kefalinin (Leuciscus cephalus) geleneksel Japon ürünü surumiye işlenerek değerlendirilme imkânlarının araştırılması üzerine kurulmuş ve yürütülmüştür. Temizlenmiş balık, kıyma ve ham surumideki ortalama randıman değerleri sırasıyla; % 52.83, % 49.71 ve % 37.71 olarak tespit edilmiştir. Surumi'de yapılan kimyasal analizler sonucunda ise kuru madde, ham protein, yağ, kül ve pH değerleri sırasıyla; % 18.88, % 18.50, % 1.03, % 0.39 ve 6.72 olarak bulunmuştur. Populasyonun aylara göre belirlenen kondüsyon faktörü ve gonadosomatik indeks değerleri ile ürün randımanı arasındaki ilişkileri ise istatistik! olarak önemsiz çıkmıştır (P>0.05). Araştırma sonucunda tatlı su kefali'nin surumiye işlenerek değerlendirilebileceği kanaatine varılmıştır.
An investigation on the surimi production from processing of (Leuciscus cephalus) fish species
In this study the possibility of evaluation of Leuciscus cephalus processing as surumi, a traditional Japon product, was investigated. The mean yield rate value for rinsed, minced arid unprocessed surumi were 52.83, 49.71, and 37.71 % respectively. At the end of chemical analysis from surumi the, crude protein, fat, ash and pH values were found as 18.88,18.50,1.03, 0.39 % and 6.72 respectively. The relationship between product rates and gonadosomatic indexes (GSI) and condition factors (K) were determined montly and were found insignificant (P> 0.05). As a result, surumi can be obtained from the Leicuscus cephalus.
