Mısır ve mısır kaynaklı gıdalarda fumonisinler
Fusarium türleri çok önemli mikotoksin üreticileri, olup tane üzerindeki gelişimleri mikotoksin köntaminasyonuna yol açabilmektedir. 1988 yılında Güney Afrika'nın. Transkei Bölgesi 'nde keşfedilen fumonisitüer en önemli toksik küf metabolitleri arasındadır. Bunlar hem mısır hem de mısır kaynaklı gıdalarda bulunanı Fusarium monilifome ve F. proliferatum tarafından üretilirler. Fumonisinler farklı ülkelerde mısır ve rnısır kaynaklı insan gıdaları ve hayvan yemlerinde tespit edilmiş ye bazı hastalıklarla ilişkilendirilmiştir. Fumonisinler atlarda leukoencephalomalacia (LEM)'ya, farelerde karacîğer kanserine ve domuzlarda akciğer ödemine sebep olmaktadır, insanlarda ise, çeşitli ülkelerde (özellikle Güney Afrika'nın Transkei Bölgesi) yüksek oranlarda yemek borusu kanseri ile ilişkilendirilmiştir.
Fumonising in maize and maize-maize-based foods
Fusarium species are very important mycotoxin producers arid their growth on ripening grains may lead to mycotoxin contamination. In 1988, fumonisins, which were discovery in the Transkei, South Africa, belong to the most important toxic fungal metabolites. They are produced by Fusarium moniliforme and F.proliferatum that are found in both com and corn-based food. Fumonisins have been reported in maize and maize-based human food and animal feed in various countries and these mycotoxins have been associated with several diseased.They have been to cause disease symptoms of leucoencephalomalacia (LEM) in horses, pulmonary edema in swine and hepatocellular carcinoma in rats. In humans, fumonisins have been implicated in the high incidence of esophageal cancer in various countries (especially Transkei in the South Africa).
