Fonksiyonel Gıdalar Ve Fitokimyasallar

Milenyumun başlamasıyla gıda bilimi ve beslenme konularında gıda ve ilaç etkileşimini vurgulayan yeni bir alan ortaya çıkmıştır. Bu alanda yapılan çalışmalar yaş ilerledikçe daha sık görülmeye başlayan kronik hastalıkları önleyen veya geciktiren besin olmayan bileşenleri ve sağlığı koruyan besinleri içeren “fonksiyonel gıdaları” konu almaktadır. Fonksiyonel gıdaların tüketilmesi sağlığı korumak ve hastalık riskini düşürmek için etkili bir yol olarak görülmektedir. İn vivo ve in vitro çalışmalarda elde edilen epidemiyolojik deliller ve klinik deneme verileri bitkisel ürünlere dayalı beslenmenin kronik hastalık riskini özellikle de kanser riskini azaltabileceğini göstermiştir. Bitkisel ürünlerde “fitokimyasallar” olarak bilinen kanser riskini azaltabilen bileşikler bulunmuştur. Fonksiyonel gıdalar içerdikleri bu bileşikler sayesinde sağlığı olumlu etkileyebilmektedirler. Bu derlemede gıdaların içerdiği hastalık önleyici ve koruyucu bileşikler ile bitkisel kaynaklı fonksiyonel gıdalara değinilmiştir

Fonksiyonel Gıdalar Ve Fitokimyasallar

As the millenium begins, we witness a new era in the fields of food science and nutrition with an increasing emphasis on the interaction of foods and medicine. In this area of study “functional foods” are subjects, which involves food components, as essential nutrients needed to maintain optimum health, and as non-nutritional components which contribute to the prevention or the delay of the choronic illnesses associated with advancing age. Consuming functional foods is considered as an effective way of maintaining of health and reducing disease risks. Overwhelming evidence from epidemiological in vivo, in vitro and clinical trial data indicates that a plant-based diet can reduce the risk of choronic disease, particularly cancer. Components were found in plants known as “phytochemicals” which may reduce cancer risk. Functional foods may positively effect health owing to these compounds they contain.
