Gıdalarımızla Soframıza ve Hayatımıza Giren Toksin: Dioksin

Dioksinler içerisinde en çok bilinen poliklorludibenzo-ρara-dioksinler (PCDD), poliklorludibenzofuranlar (PCDF) ve poliklorlubifeniller (PCB) hemen her yerde bulunabilen insan ve hayvan sağlığını tehdit eden toksik çevre kirleticileridir. Lipofilik olmaları ve suda az çözünmelerinden dolayı gıdalarda birikme potansiyeline sahiptirler. Dioksine daha çok gıda zinciri ile maruz kalınır. Hayvansal gıdalardan et ve et ürünleri, süt ve süt ürünleri ve deniz ürünleri ile daha yüksek olmak üzere; daha düşük düzeyde bitkisel gıdalar yoluyla maruz kalınır. Dioksin ve dioksin benzeri maddelerin çevreye salınımları kimyasal ve tıbbi artıkların yakma fırınlarında yakılması, kağıt endüstrisinde klor içeren yöntemlerin kullanılması, klorlu pestisidlerin ve herbisidlerin üretimiyle olmakta ve bu toksik maddeler 1. sınıf kanserojen maddeler içerisinde yer almaktadırlar. Bu derlemede dioksinlerin özellikleri, kaynakları, bitkisel ve hayvansal kaynaklarla hayatımıza nasıl girdiği ve zararları konusunda genel bilgi verilecektir.

Among the most known dioxins, Polychlorinated dibenzo-p-dioxins (PCDD), polychlorinated dibenzofurans (PCDF) and polychlorinated biphenyls (PCB) are toxical environmental pollutants that could be found everywhere and are human and animals’ life threatening chemicals. Because of lipophilic characteristics and low dissolving properties they have accumulating potential in food. Exposure to dioxin happens via food chain, particularly via animal originated food (meat, meat derived products, milk and milk derived food) and sea food, via plant originated food. Release of dioxin and dioxin like substances to the environment occurs thru burning the chemical and medical wastes in incinerators, use of chloride containing methods in paper industry, production of pesticides and herbicides. These toxic substances are among the first degree carcinogens. In this review, general information is given about the properties of dioxins, resources and how they enter to our life and their hazards.
