KAYSERİ'DE SATIŞA SUNULAN BALIKLARDA LİSTERİA SPP. VARLIĞININ KLASİK KÜLTÜR YÖNTEMİ İLE BELİRLENMESİ

Bu çalışma, Orta Anadolu, Kayseri'de satışa sunulan çeşitli balık türlerinin listeriozis açısından taşıdığı halk sağlığı risklerini değerlendirmek amacıyla planlanmıştır. Dört farklı balık türüne çipura (Sparus aurata), alabalık (Salmo truta), hamsi (Engraulis encrasicholus) ve levrek (Dicentrarcus labrax) ait toplam 100 balık örneği Kayseri'deki balık marketlerinden toplanarak örneklenmiştir. Balık örnekleri iki aşamalı zenginleştirme prosedürünü takiben iki ayrı selektif besi yerine ekim ve biyokimyasal identifikasyon yapılmak suretiyle Listeria spp. açısından test edilmiştir. Toplam 8 örnek (%8) Listeria spp. açısından pozitif bulunurken örneklerden sadece üçünün (%3) L. monocytogenes ile kontamine olduğu belirlenmiştir. Çalışma kapsamında 25 hamsi örneğinin 2'si (%8), ve 25 levrek örneğinin biri (%4) L. monocytogenes ile kontamine bulunurken, bir hamsi (%4), bir alabalık (%4) ve bir çipura (%4) örneğinin L. ivanovii ile ve bir çipura (%4) ve bir levrek (%4) örneğinin ise L. welshimeri ile kontamine olduğu ortaya konmuştur. Bu çalışma L. monocytogenes ve diğer Listeria türlerinin Kayseri'de sıklıkla tüketilen balık türlerinde yaygın olarak bulunmadığını göstermiştir.

DETECTION OF LİSTERİA SPP. THROUGH CULTURAL METHOD IN FISH SAMPLES SOLD IN KAYSERİ

This study was designed to evaluate public health risks in respect to listeriozis due to consumption of fish species sold in Kayseri, Middle Anotolia. One hundred fish samples belonging to four different fish species; gilt head seabream (Sparus aurata), trout (Salmo truta), anchovy (Engraulis encrasicholus) and sea bass (Dicentrarcus labrax) from fish markets of Kayseri were sampled and tested for presence of Listeria spp. using a two step enrichment procedure, followed by plating on two selective agars and subsequent biochemical identification of the isolates. Eight fish samples (8%) were positive for Listeria spp. and in only three samples (3%) L. monocytogenes was detected. Two of 25 anchovy samples (8%) one of 25 sea bass samples (4%) were found to be contaminated with L. monocytogenes whereas L. ivanovii was isolated from one of anchovy (4%), one of trout (4%) and one of gilt head seabream (4%) samples. L. welshimeri was detected only in one of gilt head seabream (%4) and one of sea bass (%4) samples. The present study shows that L. monocytogenes and other Listeria species are not commonly found in the samples of raw and fresh fish samples at the retail level in Kayseri, Middle Anotolia.
