Karsta tüketime sunulan taze ve salamura beyaz peynirlerin bazı mikrobiyolojik ve kimyasal özellikleri
Bu araştırmada 50 adet taze ve 50 adet salamura beyaz peynir örneği kullanıldı. Kars ili perakende satış yerlerinden alınan örneklerden bazı mikrobiyolojik ve kimyasal analizler yapıldı. Örneklerin tamamının, toplam mezofılik aerop canlı sayısı Bakımından Avrupa Birliği Yönetmeliği ve maya-küf sayısı bakımından Türk Standardı'nda bildirilen üst sınır değerlerinden daha fazla mikroorganizma içerdiği tespit edildi. Taze peynirlerin %16'sının koliforın grubu bakteri, %66'sının E. coli ve %4'ünün S.aureus yönünden; salamura peynirlerin %24'ünün koliforın grubu bakteri, %82'sinin E. coli ve %4'ünün S. aureus yönünden Avrupa Birliği Standardına; yine taze örneklerin sırasıyla %76, %80, %78'i ile salamura örneklerin %100, %92 ve %30'unun sözkonusu bakterileriler yönünden TS'na uymadığı görüldü. Örneklerin mikrobiyolojik yönden tümünün standartlarda bildirilen kriterlerin en az birine uymadığı tespit edildi. Kimyasal analizler sonucunda asillik ve tuz oranı (%) TS'na uygun bulundu. Taze peynirlerin tamamı % rutubet bakımından TS'na uygun bulunurken, salamura örneklerin sadece %60'ı standarda uygunluk gösterdi. Taze peynirlerin %20'si ile salamura peynirlerin ise %60'ı yarım yağlı bulunurken; taze peynirlerin %80'i, salamura peynirlerin ise %40'ı az yağlı özellik taşımaktaydı.
Some microbiological and chemical properties of ripenned and non-ripenned white cheese sold in Kars-Turkey
In this study, 50 non-ripened and 50 ripened Turkish white cheese samples were bought from markets in Kars city-Turkey and examined for the final microbiologie quality and some chemical properties of samples that ready to consumption. None of the samples examined, matched to European Union Standard upper limit as for total mesophilic aerobic counts and Turkish Standard upper limits as for yeast and mould counts. A 16%, 66% and 4% of non-ripened samples and a 24%, 82% and 4% of ripened samples did not meet El) Standard upper limits stated for coliforms, E. coli and S. aureus, respectively. Also a 76%, 80%and 78% of non-ripened samples and a 100%, 92% and 30% of ripened samples did not meet Turkish Standards' upper limits as for coliform, E. coli and S. aureus, respectively. All the samples were consist at least one criteria more than limits stated in standarts. At the end of chemical analyses, all the samples meet the TS as for acidity and salt ratio. Whil humidity ratio of all non-ripened samples meet the TS limits, only60% of ripened samples meet that standard's limit. A 20% of non-ripened and 60% of ripened samples contained 20-30% milk fat that called "semi fatty cheese" by TS. Also, the rest of samples contained less than 20% milk fat that called "low fatty cheese" by the same standard.
