İhracata yönelik üretilen bazı gıdalarda Listeria monocytogenes varlığının araştırılması

Çalışma. Bursa'da ihracata yönelik üretilen çeşitli deniz ürünleri ve sebzelerde L monocytogenes'in varlığını belirlemek amacıyla gerçekleştirildi. İncelenen 110 adet örneğin 20 (9M8.2)'sinde Listeria türleri belirlendi. Listeria spp. 2 dondurulmuş salyangoz. 15 dondurulmuş biber, 2 dondurulmuş çilek ve I dondurulmuş brüksel lahanasından izole edildi. Dondurulmuş biber örneklerinden alınan 15 Listeria izolatından 3'U L monocytogenes olarak identifiye edildi. Çalışmanın sonuçları, dondurulmuş biberlerin L monocytogenes yönünden sağlık riski oluşturabileceğini ve dondurulmuş biber işleyen işletmelerin, L monocytogenes'le olası bir konlaminasyonun kontrolü amacıyla. HACCP planlarında gerekli önlemleri almaları gerektiğini ortaya koymuştur.

Investigation on the presence of Listeria monocytogenes in some produced for exporting

The study was carried out to determine the presence of L. monocytogenes in various seafoods and vegetables produced for exporting in Bursa (Turkey). Of 110 samples analyzed, 20 (18.2%) were found to be Listeria species. Listeria spp. were isolated from 2 frozen snail meats. 15 frozen peppers. 2 frozen strawberries and 1 frozen brussels cabbage. Among 15 Listeria isolates obtained from frozen peppers, three was identified as L. monocytogenes. The results of this study indicated that frozen peppers may have potentially heallh risk, and frozen pepper producers musl take necessary precautions as indicated by HACCP principles to control possible contamination by L monocytogenes.
