Keban baraj gölü aynalı sazanlardan (Cyprinus carpio L.) ton tipi konserve üretimi
Bu çalışmada, Keban baraj gölü aynalı sazanların (Cyprinus carpio L.) ton tipi konserve üretim olanakları araştırıldı. Türk Standartları Enstitüsü ve Et Balık Kurumu'nun üretim teknikleri ve önerileri dikkate alınarak, üretilen konservelerin fiziksel, kimyasal ve duyusal yönden kaliteleri saptandı. Sosta katı madde ortalamaları (% 20.13-25.06); yağ ortalamaları balık etinde (% 2.64-2.83), sosta (%10.43-15.59); pH ortalamaları balık etinde (5.51-5.66), sosta (5.47-5.60); tuz ortalamaları balık etinde (%1.88-2.04), sosta (%1.88-2.34) olarak belirlendi. Depolama ve dayanıklılık niteliklerinin saptanmasında örneklerin 20°C'de 30 gün, 25°C'de 10 gün, 37°C'de 14 gün ve 37°C'de 30 gün inkübasyonu sonucunda hiç birinde bombaj oluşmadı. Deneysel konserve örneklerin duyusal değerlendirme ortalamalarında formüller arasında formül 1, 2 ve 3 çok iyi kalite; formül 4 ise iyi kalitede; süreler arasında (3., 6., 9. ve 12. aylarda) zamana bağlı olarak konserve örneklerinin kalitelerinde değişme olmadığı saptandı.
Ton-type canned fish production from mirror carp (Cyprinus carpio L.) of Keman dam lake
Goal of this study was to investigate the feasibility of production of ton-type mirror carp can for mass production-Physical, chemical and sensoric qualities of mirror carp can were determined tusing TSE and EBK production technique and standarts. Accordingly, mean dry matters in the sauce (20.13-25.06%); mean fat in the fish meat (2.64-2.83%), in the sauces (10.43-15.59%); mean pH in values in the fish meat (5.51-5.66), in the sauce (5.47-5.60); mean salt contens in the fish meat (1.88-2.04 %), in the sauce (1.88-2.34 %) were determined. In these studies it was noted that incubation at 20°C for 30 days, at 25°C for 10 days, at 37°C for 14 and 30 days did not influence the parameters above, significantly. In the sensory analysis of canned fish samples, it was found that samples kept in sauces I, II and HI were in best quality. Samples kept in sauce IV were in good condition. The quality of samples did not change by time. Thus differences between storage periods were found to be stalistically insignificant.
