Deneysel olarak üretilen ve farklı sıcaklık derecelerinde muhafaza edilen vakumlu ve vakumsuz aynalı sazan (Cyprinus carpio L.) pastırmalarının nitrat ve nitrit düzeyleri
Bu çalışma, deneysel olarak üretilen, farklı sıcaklık derecelerinde muhafaza edilen vakumlu ve vakumsuz 198 adet aynalı sazan (Cyprinus carpio L.) pastırmalarında muhafaza süresi boyunca nitrit ve nitrat değerlerinde meydana gelebilecek değişiklikleri belirlemek amacıyla yapıldı. Market sıcaklığında muhafaza edilen vakumlu ve vakumsuz örneklerde sırasıyla 0.3 -1.6 ppm, 0.7 - 2.2 ppm nitrit; 21.4 - 55.6 ppm, 22.1 - 54.2 ppm nitrat saptandı. Buzdolabında muhafaza edilen vakumlu ve vakumsuz pastırmalarda sırasıyla 0.4 - 1.2 ppm , 0.8 - 2.1 ppm nitrit; 22.8 - 41.5 ppm, 22.1 - 46.6 ppm nitrat tespit edildi. istatistiksel olarak, pastırmalardaki nitrit ve nitrat düzeyleri bakımından her grup içinde dönemler arasında ve market sıcaklığında muhafaza edilen, vakumlu ve vakumsuz örnekler arasında 0,21 ve 45. günlerde nitrit, 14 ve 30. günlerde nitrat; buzdolabında muhafaza edilenlerde ise 7,14 ve 120. günlerde nitrit, 7,14,45,60,90 ve 120 günlerde nitrat düzeyleri bakımından önemli farklılık bulundu (P< 0.05). Sonuç olarak, buzdolabında ve market koşullarında muhafaza edilen vakumlu ve vakumsuz pastırmaların nitrit ve nitrat değerleri bakımından iyi kalitede olduğu saptandı.
Nitrate and nitrite levels of experimentally produced and stored in different temperature conditions vacuumed and unvacuumed mirror carp(Cyprinus carpio L.) fish pastrami samples
This study was performed to determine of variations in nitrate and nitrite levels during the storage period at different temperatures in vacuumed and unvacuumed conditions Mirror carp fish (Cyprinus carpio L.) pastrami samples (198 samples) produced for the experiment were used. Nitrite and nitrate levels in samples stored at room temperature were 0.3 -1.6, 0.7-2.2 ppm; 21.4 - 55.6, 22.1 -54.2 ppm, respectively. The values of fish pastrami samples stored in refrigerator conditions were 0.4 - 1.2 , 0.8 -2.1 ppm; 22.8 - 41.5, 22.1 - 46.6 ppm respectively. Statistical analysis of the data indicated that there were significant difference between various storage periods in every group for nitrate and nitrite levels. In the nitrite levels, between vacuumed and unvacuumed samples stored at room temperature, there was significant differences at 0,21 and 45tn days. In nitrate levels, these difference were noticed at 14 and 30"1 days of storage. In sample stored at +4 °C, differences in nitrite levels vacuumed and unvacuumed pastramis, were significant at 7, 14 and 120 . Similar differences were noticed at 7,14,45,60,90 and 120m days of storage in nitrate levels (P < 0.05). In conclusion, it was noticed that vacuumed and unvacuumed Mirror carp fish pastrami samples stored either at room temperature or at refrigator conditions, values of nitrate and nitrite meet the quality standarts required for consumer health.
