Serban Baraj Gölü’nde (Afyonkarahisar) Yaşayan Squalius cephalus (L., 1758)’un Kas Dokusundaki Yağ Asidi Kompozisyonun Belirlenmesi

Bu çalışmada Şubat 2010 tarihinde Serban Baraj Gölü’ndeki 20 kefal (Squalius cephalus L., 1758) kas örneğinin yağ asidi bileşimi ?3/?6 oranı belirlenmiştir. Yağ asidi bileşimi FID dedektör, kapiller kolon (DB-23), supelco (37 mix) standartve Gaz Kromatografisi (HP Agilent 7890 A) kullanılarak analiz edilmiştir. Palmitik asit (PA,%19,374±0,631) ve stearik asit (SA,%5,760±0,476) en büyük orandaki SFA’lardır. Oleik asit (OA,%16,825±0710) ve palmitoleik asit (PA, %13,601±0,371) en büyük orandaki MUFA’lardır. Dokosaheksaenoik asit (DHA, %10,449±1,562), araşidonik asit (AA, %7,338±0,558), eikosapentaenoik asit (EPA, %5,954±0,916), linoleik asit (LA, %4,558±0,440) and linolenik asit (LNA, %3,061±0,449) en bol bulunan PUFA’lardır. Toplam SFA, toplam MUFA ve toplam PUFA’nın toplam lipitteki oranları sırasıyla %28,414; %32,524; %38,197 olarak bulunmuştur. Determination of the Fatty Acid Composition in Muscle Tissue of Squalius cephalus (L.1758) Living in Serban Dam Lake (Afyonkarahisar)

In this study, the fatty acid composition and ?3/?6 fatty acid ratio was determined in muscle samples from 20 chub (Squalius cephalus L., 1758) in Serban Dam Lake on February 2010. The fatty acid composition was analyzed by GC (HP Agilent 7890 A) with FID detector, capillary column (DB-23) and supelco (37 mix) standard. Palmitic acid (PA,%19,374±0,631) and stearic acid (SA,%5,760±0,476) were the major SFA. Oleic acid (OA,%16,825±0710) and palmitoleic acid (PA, %13,601±0,371) were the major MUFA. Docosaheksaenoic acid (DHA, %10,449±1,562), arachidonic acid (AA, %7,338±0,558), eicosapentaenoic acid (EPA, %5,954±0,916), linoleic acid (LA, %4,558±0,440) and linolenic acid (LNA, %3,061±0,449) were the most abundant PUFA. The percentages of total SFA, total MUFA and total PUFA were found %28,414; %32,524; %38,197 of total lipid, respectively. These results have shown that there are significant statistical differences between fatty acid groups (P<0.05). The ?3/?6 ratio in muscle tissues was found to be 1,285. S. cephalus is a significant dietary source of ?3 PUFA (especially DHA, EPA ve AA) for local people and ?3/?6 ratio observed in the recommended values (1-4) in Serban Dam Lake.
