Araştırmada öncelikle Dünya’da ve Türkiye’de buğday ve un üretimi ve un sanayiinin durumu incelenmiştir Türkiye’de buğdaya uygulanan destekleme politikaları un sanayiinde kapasite kullanımı üretim ithalat ve ihracat konuları üzerinde durulmuş ve sorunlar saptanmıştır Araştırmada Türkiye’deki un üretimi yapan işletmeler incelenmiş farklı bölgelerden 49 adet un fabrikası yöneticileriyle anket çalışması yapılmıştır İşletmelerin kapasiteleri teknolojik durumu çalışma sistemleri üretim miktarları hammadde temini pazarlama ile ilgili konular incelenmiş ve sorunlar tespit edilerek çözüm önerileri geliştirilmiştir Bu veriler endüstri organizasyon modeli içerisinde Yapı Davranış ve Performans şeklinde analiz edilmiştir Çalışma sonucunda; buğdayda kalite yetersizliği atıl kapasite ve haksız rekabet hemen hemen bütün işletmelerde ortak sorunlar olarak belirlenmiştir Mevcut sorunlarına çözüm bulabilen gerek sermaye gerekse teknolojik açıdan gücünü koruyabilen ve sağlam bir yönetim yapısına sahip olan firmalar sektördeki paylarını korurken diğerlerinin sektör içindeki payları azalmaktadır

In this research firstly the produclion of wheat wheat flour and the situation of tlour mill industry in the world and Turkey were investigated The support policies which were appIied to wheat İn Turkey the capacity for flom mill industry production import export affair were discussed and the problem v eredetermined The producer of tlour mill in Turkey were analysed Investigation data was collected by questionnaire from 49 active firms where loceted different regions İn Turkey The capasities of the fırms technological levels the production amount the supply of row material and marketing were examined and problems and solution \vere discussed Industrial organisation model Structure Conduct and Performans were used for analysis these data Determined problems are inactive capacity low guality wheat and unfair competition As a result which can find solutions 10 their problems and keep thejr capital and technological power are claim a stable share in the field otherwise they lo st their shares in the market
