Keçilerde kazein genlerindeki çeşitlilik ve önemi

Bazı insanlarda sık görülen inek sütüne karşı alerji, keçi sütünün önemini artırmıştır. Keçi sütü, kazein içeriği açısından büyük bir varyasyon göstermektedir. Keçi sütüne karşı oluşan alerjinin daha düşük düzeyde olmasının bir nedeni, bazı keçilerin sütlerindeki kazein içeriğinin düşük olmasıdır. Diğer taraftan, yüksek düzeyde kazein içeren sütler peynir yapımında tercih edilebilir. Bu nedenlerle, keçilerde kazein genlerindeki çeşitlilik yoğun bir şekilde araştırılmaktadır. Sunulan derlemenin amacı, kazein genlerindeki çeşitliliğin keçi sütünün besleyiciliği ve teknolojik özellikleri üzerindeki etkileri konusunda bilgi sunmaktır.

Variability and importance of casein genes in goats

The importance of goat milk is increasing due to high incidence of cow’s milk allergy in some countries. Goat milk shows a great variation in casein content due to the polymorphism in casein genes. The less allergeneity of goat milk might be attributed to the low amount of casein in the milk of some individuals. On the other hand milk with high casein content can be utilized for cheese making. Therefore, the variability of casein genes in goats is intensively studied. The aim of this review was to present information on the variability of casein genes and its effect on the nutritional and technological properties of goat milk.
