Üzümlerde antosiyaninler ve biyosentezi

Bu makalede, üzümlerde antosiyaninler ve biyosentezi konusunda görüşlere yer verilmiştir. Üzümlerde kırmızı, mavi, mor ve siyah renkler antosiyanin pigmentlerinden oluşmaktadır. Antosiyaninler çoğunlukla tane kabuğunda yer almaktadır. Antosiyaninler antosiyanidinlere bir veya daha fazla şeker molekülünün eklenmesiyle oluşmaktadır. Üzümlerde yaygın olarak bulunan antosiyanidinler; pelargonidin, siyanidin, delfinidin, peonidin, petunidin ve malvidin’dir. Üzümlerin V. vinifera türünde yalnızca monoglikozit antosiyaninlere, diğer tür ve melezlerinde ise çoğunlukla diglikozit yanı sıra monoglikozit antosiyaninlere rastlanmaktadır.

Anthocyanins and it's biosynthesis in grapes

The types of anthocyanins and their biosynthesis in grapes are documented in detail in this article. Red, blue, purple and black coloration in grapes are fundamentally associated with anthocyanins. Anthocyanins in grapes are predominantly found in the skin. Anthocyanins are formed by the addition of one or more sugar molecules to anthocyanidins.The major types of anthocyanidins present in grapes are pelargonidin, cyanidin, delphinidin, peonidin, petunidin and malvidin. V. vinifera consists almost exclusively of monoglucoside anthocyanins, whereas other Vitis species and inter-crosses contain mono- and di-glucoside anthocyanins, with the latter being predominant.
