Zeytinyağının Biyoaktif Bileşenleri ve Sağlık Üzerine Yararları

Zeytinyağı içerdiği yüksek oranda tekli doymamış yağ asitleri ile karakterize edilmekte olup, sağlık üzerine yararlı etkilileri bulunan fenolik bileşikler, sekualen ve E vitamini gibi fitokimyasallar açısından önemli bir kaynaktır. Zeytinyağı 'doğal fonksiyonel gıda' olarak da bilinmekte ve oksidatif strese bağlı olarak oluşan kanser, kalp damar hastalıkları, ülser ve diyabet gibi hastalıklar ile Alzheimer ve bunama gibi yaşlanmaya bağlı oluşan hastalıklar üzerine koruyucu etkileri bulunmaktadır. Zeytinyağı tüketimine bağlı olarak kanser, kalp damar hastalıklarının oluşum riski ve bu hastalıklardan olan ölüm oranlarının daha az olduğu belirtilmektedir. Bu koruyucu etki zeytinyağı içinde bulunan biyoaktif bileşenlerin sinerjistik etkileşimi ile sağlanmaktadır. Bu çalışmada zeytinyağındaki biyoaktif bileşenlerinin sağlık üzerine yararları ve ilgili etki mekanizmaları derlenmiştir.

Bioactive Compounds in Olive Oil and Their Health Benefits

Along with its high content of monounsaturated fatty acids, olive oil is an important source of health beneficial phytochemicals such as phenolic compounds, squalene, and vitamin E. It is also considered as a 'natural functional food', and it may have protective effects on oxidative stress derived illnesses such as cancer, cardiovascular diseases, ulcer, diabetes and age-related disorders such as Alzheimer and dementia. It has been stated that high consumption of olive oil is associated with a reduced risk of incidence and mortality of cardiovascular disease and cancer. This protective effect is more likely to be the synergistic interactions between bioactive compounds in olive oil. In this review, the health benefits of olive oil bioactive compounds and their mechanisms of actions are reviewed.
