Yoğurt Çeşitleri, Yoğurtlarda Görülen Bazı Kusurlar ve Çözüm Önerileri

İnsanların tükettiği gıdalar arasında önemli bir yeri olan yoğurt, laktik asit bakterileri yardımıyla sütün laktik asit fermantasyona uğratılması sonucu oluşan farklı kıvamlarda, kendine özgü yapı ve kusursuz lezzet gibi özelliklere sahip fermente bir süt ürünüdür. Son yıllarda dünyada tüketilen yoğurt çeşitleri artmıştır. Yoğurt üretiminde kimi zaman standart olmayan üretim yöntemlerinin uygulanmasıyla kalitesi düşük yoğurtlar üretilmekte ve bu yoğurtlarda bazı kusurlar görülmektedir. Bu derlemede yoğurt üretimi ve yoğurt çeşitlerinden kısaca bahsedilip, yoğurtlarda görülen bazı kusurlar ve bunlara yönelik çözüm önerilerine yer verilmiştir.

Yoghurt Types, Defects in Yoghurts and Solutions

Yoghurt, an important food item among other foods, consists of milk fermented by lactic acid bacteria. It is fermented milk with some properties, different consistency, unique structure and excellent flavor. In recent years, the consumption of different types of yoghurt has increased throughout the world. Quality of yoghurt manufactured with non-standard production methods may be poor, and structural as well as sensorial defects may present in these types of yoghurts. This review presents yoghurt production and yoghurt types briefly, and explains some defects in yoghurts and solutions.
