Gıda Güvenliğinin Sağlanmasında Radyo Frekanslı Tanımlama Teknolojisinin Rolü

Gıda endüstrisinde, gıda zincirinin her halkası son ürünün kalitesini etkilediği için tedarik zinciri yönetiminde gıda güvenliğini garanti altına almak esastır. Son yıllarda, stratejik bir teknoloji aracı olarak tanımlanan Radyo Frekanslı Tanımlama Teknolojisi (RFID), gıda tedarik zincirinde gıda güvenliğinin sağlanmasında kullanılan yenilikçi bir sistemdir. RFID teknolojisi gıda tedarik zincirinde verimlilik, doğruluk, görünürlük ve güvenlik sağlamakla beraber zincirin herhangi bir aşamasında üretici, tedarikçi, dağıtıcı ve perakendeciler tarafından paylaşılabilen gerçek zamanlı bilgi (stok, lojistik, teslimat) sağlamaktadır. Kablosuz sensörler kullanarak, insan müdahalesi olmadan ürünlerin tanımlanmasına ve veri iletişimine olanak sağlayan RFID etiketler, sıcaklık ve nem gibi çevresel değişkenleri de ölçerek iletir. Bu çalışmada, RFID teknolojisi ve RFID teknolojisinin gıda endüstrisindeki uygulama alanlarının tanıtılması amaçlanmıştır. Gıda endüstrisinde tedarik zinciri yönetimi, sıcaklığın ve tazeliğin izlenmesinde kullanılan RFID tabanlı akıllı etiketlere ait endüstriyel ve deneysel çalışmalar değerlendirilmiştir

Role of Radio Frequency Identification (RFID) in Providing Food Safety

In food industry, supply chain management is essential to guarantee food safety because each link in the chain affects the quality of final products. Radio Frequency Identification (RFID), which can be defined as a strategic technology tool for providing food safety in the food supply chain, is an innovative system and provides efficiency, accuracy, visibility and security on supply chain and real time information (inventory, logistics, delivery) which can be shared at any stage of supply chain by supplier, manufacturer, distributor and retailer. RFID tags, which uses the wireless sensors to identify the product and to provide the communication data without human intervention, transmit measurements of environmental factors such as temperature and relative humidity. In this paper, the representation of RFID system and its applications in food industry were aimed. Moreover, RFID based smart tags that are used to supply chain management and to monitor temperature and freshness in food industry were evaluated by industrial and experimental studies
