Sofralık zeytin, mevsime bağlı olarak yıllık 2,4 milyon ton üretimle dünya ticaretinde yeri olan en önemli fermente ürünlerden biridir. Ülkemizde her gün tüketilen sofralık siyah zeytinin diyetimizde özel bir yeri vardır ve biyolojik değeri oldukça yüksek bir gıda maddesidir. Tüketim aşamasında oluşan küfleri önlemek için, potasyum sorbat ve sodyum benzoat, zeytin ve zeytin bazlı ürünlerde koruyucu olarak kullanılmaktadır. Bu çalışmanın amacı İzmir piyasasından temin edilen sofralık siyah zeytinlerin potasyum sorbat ve sodyum benzoat düzeylerinin HPLC ile belirlenmesidir. Bu amaçla 25 adet sofralık siyah zeytin örneği İzmir’deki farklı satış noktalarından alınmış ve HPLC ile potasyum sorbat ve sodyum benzoat düzeyleri belirlenmiştir. Potasyum sorbat ve sodyum benzoat toplamı örneklerin 3 tanesinde Türk Gıda Kodeksinde izin verilen düzeyin üzerinde tespit edilirken 22 tanesinde izin verilen limitlerin altında bulunmuştur

Table olive is one of the most important fermented product in world trade with 2.4 million tones production depending on season. Table olive consumed everyday has a special place in our country and also has a high biological value. To prevent the formation of molds during the consumption stage, potassium sorbate and sodium benzoate are used as a preservative in olives and the olive-based products. In this study it is aimed to determine sodium benzoate and potassium sorbate levels by HPLC in table olives supplied from İzmir market. For this purpose 25 samples of table olive were obtained from different markets in İzmir and potassium sorbate and sodium benzoate levels were determined by HPLC. Sum of potassium sorbate and sodium benzoate was detected above the permitted limits of Turkish Food Codex in 3 of the samples while below the permitted limits in the rest of 22 samples
