Kremalı pastalarda Listeria türlerinin varlıgının belirlenmesi amacıyla yapılan bu çalısmada, Afyonkarahisar sehir merkezindeki pastanelerden satın alınan 25 adet sade, 25 adet meyveli ve 25 adet çikolatalı olmak üzere toplam 75 adet kremalı pasta örnegi analiz edilmistir. Listeria türlerinin izolasyon ve identifikasyonunda Amerikan Gıda ve İlaç Dairesinin (Food and Drug Administiration/FDA) önerdigi metot kullanılmıstır. Yapılan bu çalısmada, incelenen toplam 75 kremalı pasta örneginin 10’unda (% 13.33) Listeria spp., 5’inde (%6.66) L. monocytogenes, 8’inde (%10.66) L. innocula ve 3’ünde (%4) L. seeligeri identifiye edilmistir. Sade kremalı pasta örneklerinin 3’ünde (%12) Listeria spp., 2’sinde (%8) L. monocytogenes, 1’inde (%4) L. innocula; meyveli kremalı pasta örneklerinin 5’inde (%20) Listeria spp., 3’ünde (%12) L. monocytogenes ve 2’sinde (%8) L. seeligeri; çikolatalı kremalı pasta örneklerinin 2’sinde (%8) Listeria spp., 1’inde (%4) L. innocula ve 1’inde (%4) L. seeligeri identifiye edilmistir. Sonuç olarak, Afyonkarahisar’da tüketime sunulan kremalı pastalarda patojen olan L. monocytogenes ve Listeria türlerinin tespit edilmesi, bu ürünlerin halk saglıgı açısından risk olusturabilecegini göstermektedir.
The purpose of this study was to identify the types of Listeria in cream cakes; and to realize this a total of 75 cream cakes consisting of 25 plain, 25 fruit and 25 chocolate cream cakes bought from the pastry shops in downtown Afyonkarahisar were sampled and analyzed. The method used for isolation and identification of Listeria types is one recommended by the American Food and Drug Administration (FDA). 10 of the 75 cream cake samples inspected in this study revealed (% 13.33) Listeria spp., five of them revealed (%6.66) L. monocytogenes, 8 revealed (%10.66) L. innocula and 3 had (%4) L. seeligeri. Listeria spp. was identified in 3 (12%) of the plain cream cake samples, L. monocytogenes was identified in 2 (8%) of the samples, in 1 (%4) L. innocula was identified in one (4%) of the cream fruit cake samples; 5 (20%) samples of the cream fruit cake samples revealed Listeria spp., 3 (12%) had L. monocytogenes and 2 (8%) were identified with having L. seeligeri; Listeria spp. was identified in 2 (8%) of the chocolate cream cakes and, L. innocula in one (4%) and L. seeligeri in another one (4%). It is concluded that as the cream cakes presented for consumption in Afyonkarahisar have been identified with having types of the pathogens L. monocytogenes and Listeria sspp., these products may present a public health hazard.
