Cryptosporidium parvum' un buluşmasında su ve gıdaların rolü

Cryptosporidium parvum (C.parvum), cryptosporodiosis salgınlarına yol açan tehlikeli protozoon bir parazittir. Bu parazit çeşitli çevresel stres koşullarına ve gıda işleme prosedürlerine dirençli olan ookist formunda, kontamine su ve çiğ gıdalar ile nakledilebilmektedir. Gıda maddelerinin işlenmesi sırasında C.parvum ile bulaşık suların kullanılması etkenin gıda işletmelerine girişinde potansiyel bir kaynak olarak görülmektedir. Bu derlemede, su ve gıdaların etkenin bulaşmasındaki rolü ve gıda zincirinden bu paraziti elimine etmede gıda endüstrisinde uygulanabilecek işletme kontrolleri üzerinde durulacaktır.

The role of water and foods in the transmission of Cryptosporidium parvum

Cryptosporidium parvum (C.parvum) is a emerging protozoan parasite responsible for several serious outbreaks of cryptosporidiosis. This parasite can be transmitted through contaminated water and raw food in the oocyst form, which is resistant to many environmental stresses and food processes. Employment of contaminated water in the production of foodstuffs may represent an important potential source of entry into food processing. This review article aims to examine the transmission of the pathogen via waters and foods, and processing controls that may be beneficial to the food industry to help eliminate this parasite from the human foodchain.
