Ham ve salamura kapari ( Capparis spp.) meyvelerinin fiziksel,kimyasal özellikleri ve yağ asitleri bileşimi
: Haziran 1996'da toplanan Capparis spinosa L. var. spinosa ve Capparis ovata Desf. var. canescens (Coss.) Heywood'in 0.7-1.9 cm çapındaki meyveleri salamura ürüne işlenmiştir. C. spinosa ham meyvelerinin ham yağ, ham selüloz, pH, nişasta, suda çözünürlük, alkolde çözünürlük ve eterde çözünürlükleriyle Na, Mn ve Zn içerikleri C. ovata'ya göre yüksekse de oleik ve linoleik asitler düşüktür. İki türde de başlıca yağ asitleri linoleik, oleik, linolenik ve palmitiktir. Meyvelerin salamuraya işlenmesiyle ham protein, ham yağ, ham selüloz, indirgen şeker, ham enerji, nişasta, toplam karotenoit, eterde çözünürlük, sertlik, K, P, Cu, Mn ve Zn, palmitoleik, oleik ve linoleik asitler, ham durumlarına göre değişik oranlarda azalmıştır. C. spinosa meyvelerinin bazı besin unsurlarınca zenginliği, bu türün ürün işlemeye daha uygun olduğunu göstermektedir.
The physical and chemical properties and fatty acid compositions of raw and brined caperberries ( Capparis spp.)
Fruits of Capparis spinosa 1. var. spinosa and Capparis ovata Desf. var. canescens (Coss.) Heywood 0.7-1.9 cm in diameter were collected and brined. The crude oil, fiber and pH, starch, water-soluble, alcohol-soluble and ether-soluble extracts, and the Na, Mn and Zn contents of C. spinosa fruits were higher than those of C. ovata, while they contained less oleic and linoleic acids. The crude protein, oil, fiber and energy, reducing sugars, starch, total carotenoids, ether-soluble extract, hardness, K, P, Cu, Mn, Zn, palmitic and oleic contents of the fermented products were considerably lower compared with the raw fruits. The major fatty acids in both species and material were linoleic, oleic, linolenic and palmitic. C. spinosa fruits were more suitable for pickling because of the high levels of several nutrients
