Fruktoz; Bir Halk Sağlığı Sorunu mu?

Mısır içindeki fruktoz bir dizi kimyasal işlemden geçerek yüksek fruktozlu mısır şurubu halinde piyasadaki pek çok ürün içinde kullanılmaktadır. Raf ömrünün uzun oluşu, gıdalara nem tutucu özelliğiyle yumuşaklık vermesi, diğer şekerlere göre daha tatlı oluşu bu ürünü tercih edilir hale getirmiştir. Yüksek fruktozlu mısır şurubunun olası yan etkileri hayvan ve insan çalışmalarıyla araştırılmış ancak fizyolojik sınırlarda tüketimin ciddi bir yan etki oluşturduğu kanıtlanamamıştır. Ancak bu tür yiyecek ve içeceklerin tüketiminin hiperkalorik alıma eşlik ettiği ve buna bağlı metabolik komplikasyonlara yol açtığı düşünülmektedir. Bu nedenle uygun miktardaki doğal fruktozun yararı tartışılmaz olup aşırı tüketilmesi halinde olumsuz etkilerin görülmesi kaçınılmazdır.

Fructose; is that a public health problem?

High fructose corn syrup used in many products on the market is occured through a series of chemical processes. Long shelf life, and food softness because of the moisture-retaining properties, being more sweeter than other sugars have rendered preferred this product. Possible side effects of high fructose corn syrup with animal and human studies have been investigated but no evidence related serious adverse effect could be found with physiologic consumption. However this type of food and drink intake is accompanied by the consumption of hypercaloric energy and is believed to cause metabolic complications. Therefore, the appropriate amounts of natural fructose has indisputable benefits if consumed excessively adverse effects are inevitable.
