Mikotoksinler ve moleküler düzeydeki etkileri

Mikotoksinler esas olarak protein yapısında ve antijen özellikte olan bakteriyel toksinlerin aksine, çok çeşitli kimyasal yapı ve biyolojik aktiviteye sahip olan moleküllerdir. Her şartta oluşabilmeleri ve birçok gıda maddesinde toksin oluşturabilmeleri, beslenme, inhalasyon ve deri teması yoluyla bulaşabilmeleri nedeniyle, mikotoksinler çok önemli doğal toksinler olarak kabul edilmektedir ve kontrol altına alınması gereken önemli sorunlardan biridir. Bu nedenlerle, mikotoksin türlerinin tanınması, öneminin anlaşılması ve bu konuda toplumun bilinçlenmesi kontaminasyon riskini azaltmak ve önlem almak adına önem taşımaktadır. Bu derlemede mikotoksinlerin hücresel düzeydeki etkilerinin belirli literatürler ışığında ortaya konulması amaçlanmıştır.

Mycotoxins and its molecular effects

Mycotoxins are molecules that have a wide variety of chemical structures and biological activities, unlike bacterial toxins, which are primarily protein and antigen specific. Mycotoxins are very important natural toxins and one of the important problems that need to be under control because they can be formed under all conditions and produce toxins in many foods and transmitted through nutrition, inhalation and skin contact. For these reasons, recognition of mycotoxin species, understanding of the importance and awareness of the community in this regard is important to reduce the risk of contamination and to take precautions. In this review, it is aimed to reveal the effects of mycotoxins at the cellular level in the light of certain literatures.
