Ankara piyasasında satılan beyaz peynirlerin tat puanları ile bazı kimyasal nitelikleri arasındaki ilşikinin belirlenmesi

Ankara piyasasına ait toplam 40 adet Beyaz peynir örneği 20' şer adet olmak üzere Haziran ve Kasım aylarında toplanmıştır. Örneklerin kimyasal ve duyusal analizleri yapılarak, bunların aldıkları tat puanları ile kimyasal nitelikleri arasındaki ilişki aylara göre değerlendirilmiş ve sonuçta her dönemde çok fazla nitelikteki peynirlerin piyasada bulunmasından, analize alınan örnek sayısının azlığından, standart ve objektif bir puanlama sisteminin bulunmasından dolayı düzenli bir ilişki ortaya konulamamıştır.

Determination of relationship between flavour scores and some chemical properties of pickled white cheese in Ankara market

Forty cheese samples were bought from Ankara market. Twenty of them were bought in June. The other twenty cheese samples were bought in November. Chemical and organoleptic analyses of samples were carried out in these samples and the relation between organoleptic scores and chemical qualities were evaluated according to months. As a result, we didn't find a relationship between these qualities. Because cheese samples had very different qualities and the number of cheeses wasn't enough in market, also there wasn't a standart and objective scoring system.
