Nisinin antimikrobiyal etkisi,taze ve işlenmiş balıklarda kullanımı

Nisin, Lactococcus lactis'in bazı suşları tarafından üretilen bir bakteriyosindir. Son yıllarda çeşitli gıdalarda koruyucu olarak başarıyla kullanılmaktadır. Bu derlemede nişinin yapısı, etki mekanizması, antimikrobiyal özellikleri ile taze ve işlenmiş balıklardaki kullanımından bahsedilmiştir.

The antimicrobial effects of nisin, it's application in fresh and processed fish

Nisin is a bacteriocin produced by certain strains of Lactococcus lactis. In recent years, it has been used succesfully in a wide variety of food products as a food preservative. In this presentation, structure, mode of action, antimicrobial properties of nisin and its application in fresh and processed fish were reviewed.
