Su ürünleri işleme endüstrisinin gelişiminde en önemli faktörlerden birisi işleme artıklarıdır. Kabuklu su ürünleri (karides, krill, yengeç, midye, istiridye v.s.) işlendiklerinde büyük miktarlarda sıvı (çeşitli işleme aşamalarından yıkama suları) ve katı (kabuk, iç organlar v.s.) artıklar üretilmektedir. Sıvı artıklar protein ve küçük miktarlarda etten oluşan çözülebilir ve suspense olmuş katıları içermektedir. Genellikle Türkiye'de bu sıvı ve katı artıklar arazilere veya doğal su kanallarına atılmaktadır. Sadece bazı katı artıklar balık unu üretiminde kullanılmaktadır. Bu artıkların tamamının insanların tüketimine ve hayvan besinlerine dönüştürülmesi su ürünleri endüstrisi ve halk sağlığı için yararlar sağlayabilmektedir.
Processing waste treatment is one of the major obstacles in the development of seafood processing industry. Crustacea processing large amounts of liquid (wash water from various processing stages) and solid (bellies and shells) waste effluents are produced. The liquid effluents contain soluble and suspended solids which are composed of appreciable quantities of protein and small pieces of meat. Traditionally, these liquid and solid waste effluents are discarded in landfills or into natural waterways. Some of these solid wastes are used for producing fish meal. Recovery of these wastes for human consumption or animal feeds could be fundamental benefits to both seafood industry and public health.
