Kahramanmaras’ta Tüketime Sunulan Tavuk Etlerinde Listeria Türlerinin Patojenitesi’nin Belirlenmesi
Doğada çok yaygın olarak bulunan Listeria türleri ve özellikle de Listeria monocytogenes insan ve birçok hayvan türü için patojen bir mikroorganizmadır. Son yıllarda insanlarda görülen Listeria salgınlarında basta süt ve süt ürünleri olmak üzere et ve et ürünleri, balık ve kanatlı etleri gibi hayvansal kökenli gıdalar üzerinde patojenik olarak önemli bir rol oynadığı ortaya konmustur. Bu çalısmada, Kahramanmaras ilinde çesitli satıs yerlerinden temin edilen 30 tavuk eti örneğininde Listeria türleri arastırılmıstır. Bütün örneklere 30 °C’de zenginlestirme yöntemi uygulanmıs veListeria Selektif Agar besiyerine yapılan ekimlerin sonucu değerlendirilmistir. Đnceleme sonucunda örneklerin 20’sindeListeria izole edilmistir. Yapılan biyokimyasal testler sonucunda bu izolatların tümünün Listeria grayi olduğu belirlenmistir.
Pathogeny of Listeria Species in Retail Chicken Meat Consumed in Kahraman Maras City
Listeria spp and particularly Listeria monocytogenes is a human and a wide varity of animals pathogen that are widespread in nature. In recent years it has been determined that some food as meat and products, chicken andfish of animal origine particulary milk and milk products played a major causative role in Listeria outbreak. Listeria monocytogenes has been isolated from a wide variety of foods, including milk, dairy products, meat, chicken and fish, most of the foodborne Listeriosis outbreaks have been linked to the consumption of dairy products as well as other foods. In this study, the presence of Listeria species 30 chicken meat samples obtained from different meat markets in Kahramanmaras city was studied. All samples were incubated at 30°C for 48 hours enrichment method and this incubation was performed for enrichment of potantial Listeria species in the samples which were inoculated onto Listeria Selective Agar Base. At the end of initial, 20 Listeria strain were isolated from samples. Over all isolation wereidentified as Listeria grayi.
