The effect of kefir on the total cholesterol, trigliceride, HDL- cholesterol, LDL- cholesterol and lipid peroxidation levels following hypercholesterolemia in rabbits

It is known that oxidative stress increases in the arters of hypercholesterolemic individuals and oxidation of LDL is considered to be an important agent in the development of atherosclerosis. The anti-hipercholesterolemic and anti-lipooxidative effect of kefir (30 ml/kg./body weight/day) on the rabbits fed with a cholesterol diet (1%, w/w feed) were investigated. After a 56 days of feeding, lipid and lipid peroxide levels in serum were determined. The total cholesterol, trigliseride, HDL-cholesterol and LDL-cholesterol, and malondialdehyde levels of serum samples were separatelly analysed. The supplamentation of kefir to diet caused significant supression in serum lipids and lipid peroxide. In conclusion, anti-hypercholesterolemic effect of kefir may be due to its antioxidative and antilipidemic effects.
