Toplu tüketim amacıyla üretilen gıdaların bazı patojen mikroorganizmalar yönünden incelenmesi
Günümüz insanında, kentleşme ve nüfus artışına paralel olarak, toplu beslenme eğilimi artmış ve dolayısıyla hazır yemek üretimi bir sanayii haline gelmiştir. Ancak, üretimde gereken hijyenik ve teknolojik koşullara özen gösterilmemesi, halk sağlığı açısından bir çok problemlere neden olabilmektedir. Bu nedenle, toplu tüketim amacıyla üretilen gıdalarda, muhtemel mikrobiyolojik riskleri saptamak ve önlemler almak amacıyla bu çalışma yapıldı. Buna göre, İstanbul piyasasındaki çeşitli hazır yemek üreten fabrikalar vb. kurumlardan 7 ayrı gruba ait toplam 335 numune toplandı. Bu numuneler koagulaz pozitif Staphvlococcus aureus, Escherichia coli ve Salmonella spp. açısından incelendi ve neticede toplam 335 numunenin 62'sinde (%18.5) E.coli, bir adedinde(%0.29) Salmonella spp. izole edildi. Hiçbir örnekten koagulaz pozitif S.aureus izole edilemedi. Elde edilen bulguların değerlendirilmesinde, ineelenen numunelerde E.coli ve Salmonella spp.'nin bulunması ülkemizde hazır yemek üretiminde hijyene gereken özenin gösterilmediğini ortaya kovmaktadır.
In recent years, habit of eating ready foods has increased parallel to the increase in population. As a result of this catering has become an industry. However; not showing enough care to hygienic and technological conditions during production cause many problems related to public health. Thus, this study was performed to determine the possible risk in foods for public consumption and to take some precautions. According to this, 335 samples from 7 different groups of various catering firms were collected. They were analysed for coagulase positive Staphylococcus aureus. Salmonella spp. and Escherichia coli. As a result of the analyses, 62 of total 335 samples were (18.5%) found to contain Escherichia coli. From one of the samples, Salmonella spp. was isolated (0.29%). Coagulase positive Staphylococcus aureus was isolated in none of these samples. As a result of the evaluation of the findings, the presence of E.coli and Salmonella spp. indicated that hygiene and technology of catering in our country is not favourable and enough care is not given to these concepts.
