Şanlıurfa'da yetiştirilen farklı Antep fıstığı çeşitlerinin önemli bazı fiziksel ve mekaniksel özelliklerinin belirlenmesi
Bu çalışmada, Şanlıurfada geleneksel ve organik olarak üretilen kabuklu A ntep fıstığının bazımekaniksel özellikleri incelenmiş ve istatistiksel açıdan farklılıkları ortaya konmuştur. Elde edilenveriler, fıstık işleme tesislerinin tasarımında, tesislerde kullanılan makinaların özelliklerininbelirlenmesinde ve ürünlerin sınıfla ndırılmasında büyük bir öneme sahiptir. Sonuç olarak, 1000adetlik bir yığın içindeki çıtlaklık oranının, organik fıstıkta geleneksel fıstığa göre önemli derecedeyüksek olduğu tespit edilmiş, diğer yandan, çıtlatmak için gerekli kuvvetin; organik Antepfıstığında, geleneksel olarak üretilen Antep fıstığından daha düşük olduğu saptanmıştır.

In this study, some mechanical properties of pistachio nuts, conventional and organically producedin Sanliurfa, were examined and revealed statistically significant differences. The data obtainedfrom the study has a great importance in designing of the pistachio nut processing plants,determining the characteristics of the machines used in the plants and the classification of theproducts. As a result, the ratio of t he cracked organic pistachio nut in a batch of 1000 was foundedsignificantly higher than conventional pistachio nut .On the other hand, the cracking force requiredfor cracking organic pistachio nutwas determined less than the force for the convention alproduced pistachio
