BİYOFİLM OLUŞUM MEKANİZMASI VE BİYOFİLMLERİN GIDA GÜVENLİĞİNE ETKİSİ

Gıda kaynaklı hastalıklar, insan sağlığını her geçen gün daha fazla tehdit etmektedir. Bu hastalıklar halk sağlığı açısından büyük birer tehlikedir. Büyük ölçüde bu hastalıklara biyofilmler de neden olabilmektedir.Biyofilmler gıda endüstrisinde antimikrobiyal ajanlara ve temizliğe dirençli olan yerleşmiş mikroorganizma topluluğu şeklinde bir problem olarak ortaya çıkar. Bu çalışmada biyofilm oluşum mekanizması, biyofilmlerin gıda güvenliğine etkisi, biyofilm oluşumunu engelleme yöntemleri değerlendirilecektir.Anahtar Kelimeler: Biyofilm, antimikrobiyal ajanlar, gıda kaynaklı hastalıklar, gıda güvenliği
