Borun İnsan ve Hayvan Sağlığı Üzerine Etkileri,Antimikrobiyel Özellikleri ve Gıdalarda KullanımPotansiyelleri

Bor, doğada bileşikler halinde bulunan ve çeşitli biyolojik süreçlerde rol oynayan önemli bir mineralolup, insan ve hayvanların büyümesi için gerekli esansiyel bir iz elementtir. Türkiye, Dünya’datoplam bor rezervi sıralamasında %73'lük pay ile ilk sırada yer almaktadır. Bor, solunum, sindirimve deri yoluyla vücuda girerek ve insan ve hayvanlarda enerji, mineral ve kemik metabolizmasınıetkilemektedir. Yapılan bazı çalışmalar; bor bileşiklerinin bakteri, küf, maya ve virüslere karşıbakteriyostatik, bakterisidal, fungistatik, fungisidal ve antiviral etkilerinin olduğunu göstermektedir.Borik asit ve sodyum tetraborat, bazı gıdalarda (mersin balığı yumurtası) koruyucu olarak ve gıdatakviyelerinde kullanılmakta ayrıca gıda ambalaj malzemelerinde kullanımına yönelik çalışmalaryapılmaktadır. Bu derlemede, borun insan ve hayvan sağlığına olan etkileri, antimikrobiyelözellikleri ve gıdalarda kullanım alanları ele alınmıştır.

Effects of Boron on Human and Animal Health, Antimicrobial Properties and Its Potential Use in Foods

Boron is an important mineral found in nature as compounds, and plays roles in various biologicalprocesses, and is an essential trace element required for the growth of humans and animals.Turkey ranks first with a 73% share of total boron reserves in the world. Boron enters the bodythrough respiration, digestion, and skin, and affects energy, mineral, and bone metabolism inhumans and animals. Some studies show that boron compounds have bacteriostatic, bactericidal,fungistatic, fungicidal, and antiviral effects against bacteria, mold, yeast, and viruses. Boric acidand sodium tetraborate are used as preservatives in foods (sturgeon eggs) and food supplements,and studies are carried out for their use in food packaging materials. This paper reviews the effectsof boron on human and animal health, antimicrobial properties, and their potential for use in foods.
