Laktoz, Sitrat ve Lipit Metabolizmalarının Peynirde Lezzet Bileşenlerinin Oluşumuna Etkileri
P eynirde lezzet oluşumu olgunlaşma sürecine bağlı olan karmaşık bir sistemdir. Peynirde lezzet, sütteki üç temel bileşenden kaynaklanır. Sütte bulunan laktoz (az miktarda sitrat), lipitler ve kazein üzerine özellikle peynir mikroflorasının enzimlerinin etkisi sonucu lezzet bileşenleri ortaya çıkar. Laktoz ve sitrat peynir pıhtısında az miktarda kalmalarına rağmen önemli lezzet bileşenlerinin oluşumu için substrattırlar. Süt yağının yağ asitleri de lezzete doğrudan katkı sağlamalarının yanında bazı lezzet bileşenleri için de öncül maddelerdir. Bu derlemede laktoz, sitrat ve lipit metabolizmalarının peynirde lezzet bileşenlerinin oluşumuna katkısı incelenmiştir
